Poor Mans SuperFoods - Greek Yoghurt Poached Eggs - A meal fit for a KING!

Greek Yoghurt Poached Eggs – Like stone soup – The signature ingredient and inspiration for this dish is Greek Yoghurt. But WOW what a sensational dish.

Dish du jour Greek Yoghurt Poached Eggs for Breakfast, Brunch or Snack… ie ANYTIME. Simply delicious.

Greek Yoghurt Poached Eggs

Ingredients:

1kg pot of Greek yoghurt – AWARD WINNER: Australian Dairy Product Competition 2018 Gold 100% Aussie (not sure about packaging)

Eggs & Chives – 100% Aussie

Garlic – China

Salt – Pakistan

Pepper – Packed in Sri Lanka – Imported product – Origin unknown

White Vinegar not shown (I used a dash of balsamic)

Ingredients - Greek Yoghurt Poached Eggs

Tools Required:

Chopping Board, Sharp Knife, Saucepan, Slotted spoon, bowls, plates & cutlery

PREPARATION:

1. Place generous amount of Greek Yoghurt into a bowl per serve. The Greek Yoghurt needs to be at room temperature when serving.

2. Crack eggs into bowl

3. Chop Chives, add garlic 2 -3 heaped tablespoons or to taste to yoghurt and mix through

4. Heat water in saucepan, add a dash of vinegar – bring to a light simmer

Poached eggs is an art I haven’t mastered. However stir water to create a whirlpool. Add eggs stirring gently. Cook for up to 3 mins for a soft, runny yolk.

(Another method to try heat water to simmer, add eggs, cover, take off heat, leave for 3 minutes)

5. Serving – Spoon generous amount of room temperature Greek Yoghurt on to plate, add well drained egg, garnish with salt, pepper and chives! ENJOY!
