Poor Mans SuperFoods - Greek Yoghurt Poached Eggs - A meal fit for a KING!

Greek Yoghurt Poached Eggs – Like stone soup – The signature ingredient and inspiration for this dish is Greek Yoghurt. But WOW what a sensational dish.

Dish du jour Greek Yoghurt Poached Eggs for Breakfast, Brunch or Snack… ie ANYTIME. Simply delicious.

Greek Yoghurt Poached Eggs

Ingredients:

1kg pot of Greek yoghurt – AWARD WINNER: Australian Dairy Product Competition 2018 Gold 100% Aussie (not sure about packaging)

Eggs & Chives – 100% Aussie

Garlic – China

Salt – Pakistan

Pepper – Packed in Sri Lanka – Imported product – Origin unknown

White Vinegar not shown (I used a dash of balsamic)

Ingredients - Greek Yoghurt Poached Eggs

Tools Required:

Chopping Board, Sharp Knife, Saucepan, Slotted spoon, bowls, plates & cutlery

PREPARATION:

1. Place generous amount of Greek Yoghurt into a bowl per serve. The Greek Yoghurt needs to be at room temperature when serving.

2. Crack eggs into bowl

3. Chop Chives, add garlic 2 -3 heaped tablespoons or to taste to yoghurt and mix through

4. Heat water in saucepan, add a dash of vinegar – bring to a light simmer

Poached eggs is an art I haven’t mastered. However stir water to create a whirlpool. Add eggs stirring gently. Cook for up to 3 mins for a soft, runny yolk.

(Another method to try heat water to simmer, add eggs, cover, take off heat, leave for 3 minutes)

5. Serving – Spoon generous amount of room temperature Greek Yoghurt on to plate, add well drained egg, garnish with salt, pepper and chives! ENJOY!

$40 a day Myth Fish Dish – Poor Mans Super Food

Need to dispel the $40 a day – Myth? Here it is! A blow by blow outline of how $40 is realistically less than $10 after you pay for a place to sleep. $40 a day Myth – Fish Dish.

With no foreseeable financial improvement; it’s difficult to maintain much sense of control. You deny that you dwell on the continued loss of purpose… but it’s increasingly difficult.

Without the financial means to assist your family in the simplest of needs; barriers are created. Shame, disappointment and resent bubble inside, pushing you ever further from genuine joy.

$40 a day Myth – Fish Dish

Ripping you apart as you now deal separately, silently with private sufferings of struggle; the stench of failure bereft of joy. Despair and dark dread swell inside – the separation from life.

Salt and Pepper Fish Dish

A lower than low budget due to unforeseen costs reflects a low Aussie % in this meal.

Ingredients: Frozen fish fillets & spinach, Onion, Kale, Carrots, Celery, Tin of tomatoes, Misc Herbs and spices, Olive Oil

Tools required: Chopping Board, Sharp Knife, Large fry pan with lid, Wooden spoon, Can Opener, Serving Ladle, Spoon & Bowl

Step 1. Gather ingredients as pictured above.

Frozen fish (Vietnam)

Frozen Spinach (Packed in France from imported ingredients. God knows where it’s from)

Fresh Carrots, celery and parsley (local Community Centre) – no cost

Tin Tomatoes (Italy)

Step 2. Preparation

a. Thaw fish fillets and spinach.

b. Chop onions, wash and chop parsley and kale stalks.

c. Combine spices, garlic and stock cubes as shown above

d. Wash and cut Kale, Carrots, Celery

Origins – Olive Oil – Spain, Crushed Garlic – China, Stock Cubes – at least 90% Australian

Step 3.

– Brown 1\2 onion in olive oil.

– Season batches of fish with salt and pepper as you cook each side.

– Cook in batches.

– Remove from pan when cooked through and cover

– Set aside cooked fish in warming oven

Step 4.

– Brown remainder of onion in olive oil with kale and parsley stalks

– Add chopped Kale and combined herbs and spices. Mix with wooden spoon.

– Cover and slow simmer until Kale reduces. Approx 10 -15 mins

Step 5.

– Add celery, carrot and spinach to pan. Stir through to mix with Kale and herbs.

– Cover and slow simmer for approx. 10 mins – Stirring occasionally

Step 6.

– Add canned tomatoes to pan, stir and cover to heat through

Step 7

-Remove fish from oven.

-Fill bowl with vegetables, top with cooked fish and ENJOY!

Reheat for Lunch & Dinner & Lunch & Dinner until there’s none left!

Notes for Posterity: Year 2019 – 2020

Per fortnight fixed expenses Rent $400 including all bills, Mobile – $15, Transport – $25, Loan – $68 Total = $508

Income – $592.84 – $508 = $84.84 / 14 days = $6.06 per day

For too long I was too ashamed to go to Community Centres etc for free food; or accept my true position. I could deal with hunger then … but progressive decline and your soul torn in two you need to nourish the physical.

Psychologically I am closing off. Without your family life seems meaningless. I try not to dwell on the “what was meant to be!”

So I write this blog and attempt to push through the immobilising, debilitating sense of hopelessness and depression.
